I promised you this recipe ¡ª it’s a good one! My son’s preschool and our gym are nut-free, so a lot of premade granola bars are off-limits. I try to make my own every now and then, so these balls resulted from me throwing a bunch of ingredients in the food processor, closing my eyes, and hoping they turned out. I took careful notes ¡ª just in case.
Well lucky me, these are the best balls I’ve ever made! The oat, oat flour, and graham cracker crumbs give them a divine cookie dough taste. They might as well be cookie dough! I wonder what they’d be like baked.
Nutritionally, there is no added sugar other that the dates and what’s in the graham crackers, so you can feel awesome about eating these on your breakfast or for dessert.

6 dates, pitted and chopped2 graham cracker sheets1 tablespoon chia seeds1 tablespoon ground flax seed1 tablespoon oat flour (whole wheat flour would be OK too)1/8 teaspoon salt1/3 cup rolled oats2 tablespoons coconut butter, softened3 tablespoons milk of your choice1/4 teaspoon vanilla extract
