A Vegan Black Bean and Corn Salad You’ll Love

I wanted to share one of my favorite healthy (and incredibly easy) cookout dishes with you. Black bean succotash!

I’ve posted about this Summery corn and black bean salad before (way back in 2009), but it’s so worth mentioning again. Not only because I love the word succotash, but because it’s literally the perfect summer side. Sweet corn¡­ need I say more?! Okay fine, I will. Here’s what you’re going to love about this succotash:

It’s sweet, fresh and delicious.It’s colorful.It’s quick and easy.Only nine ingredients (and that’s counting salt and pepper!)It pairs well with everything from burgers to grilled chicken and seafood. It’s amazing as a topping for grilled salmon.Did I mention it’s quick and easy?

The next time you find yourself needing a last minute BBQ dish. I highly recommend trying this recipe. Basically all you have to do is pour the ingredients in a bowl and stir. How easy is that?
