The recipe requires only three ingredients: a zucchini| a tomato| and pesto. You can certainly make your own pesto| but Mama’s Pesto (which is fresh prepared pesto from Whole Foods) worked perfectly and saved me a bit of time.
Once you have your zucchini spiralized| toss the noodles in a bowl with the pesto and tomatoes| and you’ve got yourself a delightful little pasta dish. This dish is great for Summer| since all of the produce included is available throughout the Summer months| and there’s no cooking involved!
Simply pair this pasta with your favorite protein for a healthy dinner that comes together in about 15 minutes! Amazing| right?
