The recipe requires only three ingredients: a zucchini, a tomato, and pesto. You can certainly make your own pesto, but Mama’s Pesto (which is fresh prepared pesto from Whole Foods) worked perfectly and saved me a bit of time.
Once you have your zucchini spiralized, toss the noodles in a bowl with the pesto and tomatoes, and you’ve got yourself a delightful little pasta dish. This dish is great for Summer, since all of the produce included is available throughout the Summer months, and there’s no cooking involved!
Simply pair this pasta with your favorite protein for a healthy dinner that comes together in about 15 minutes! Amazing, right?
